Bambinelli's Cited for Cooling Violation Again: Restaurant Inspections August 28

If the same item is marked as a violation on their next inspection, the Italian restaurant's permit could be suspended. Captain D's was also reinspected after scoring a C.

Violations: 6-1B, Violation of Code: [.04(6)(f) ] Chili and Beans hot-holding in steam unit at temperatures below 135oF. Items had only been out for an hour and a half so they were reheated to 165oF. Potentially hazardous food items being hot-held should be at temperatures of 135oF or above.  Corrected On-Site.  New Violation. 6-2, Violation of Code: [.04(6)(h) ] Ribs date marked 8/20/13 and two packs of provolone date marked 8/16/13 still located in walk-in cooler. Items were discarded. Correctly date-marked refrigerated, ready-to-eat, potentially hazardous foods should be discarded within 7 days from the date of preparation.  Corrected On-Site.  New Violation. 17C, Violation of Code: [.07(2)(a) ] Floors and ceilings in bar area are not easily cleanable materials. Floor wall and ceiling materials must be easily cleanable materials  Corrected On-Site.  Repeat Violation.

Violations: 4-2B, Violation of Code: [.05(7)(b) ] Three knives with food debris stored on magnetic strip used for clean knives per PIC. Knives removed and cleaned. Food contact surfaces should be cleaned at a frequency to be kept free of food debris.  Corrected On-Site.  New Violation. 6-1C, Violation of Code: [.04(6)(d) ] Marinara, Marinara base with cooked vegetables, linguine, and penne pasta cooked previous day not cooled to 41oF within 6 hours. Items were discarded. Cooked potentially hazardous foods should be cooled to 41oF within 6 hours provided they cool from 135oF to 70oF within 2 hours. THIS IS A REPEAT VIOLATION. IF THIS PROVISION IS OUT OF COMPLIANCE ON THE NEXT ROUTINE INSPECTION PERMIT IS SUBJECT TO SUSPENSION.  Corrected On-Site.  Repeat Violation. 11A, Violation of Code: [.04(6)(e) ] Facility cooling items with lids and in large containers. Facility has cooling wands and PIC stated they would use these to cool. PIC was educated on cooling, suggest cooling without lids and in smaller containers. Approved method of cooling should be used.  Corrected On-Site.  New Violation. 11D, Violation of Code: [.05(3)(g) ] Facility could not locate a digital thermometer to measure the temperature of thin mass foods. Only a stem thermometer was provided. Provide a digital thermometer to measure the temperature of thin mass foods.  New Violation. 14D, Violation of Code: [.04(4)(n) ] Observed employee prepping food wearing a pair of single service gloves put on another single service glove to scoop cheese on a dish and then remove that glove and continue to work. Single service gloves should be used for a single task that does not present a risk of contamination.  Corrected On-Site.  New Violation.
