Chili's Scores a B: Restaurant Inspections January 9

The chain restaurant in Lilburn had some repeat violations.

The following are restaurant health inspection scores as reported by Gwinnett County:

Violations: 2-1B, Violation of Code: [.03(5)(c) ] Observed employee use gloved hands to batter raw chicken. Employee removed gloves and applied new gloves without washing hands, continuing to prepare food and touch burger buns. Corrective action: buns were discarded, gloves were removed, hands were washed, and new gloves were applied. Hands must be washed before appling gloves, in-between glove changes, after handling raw animal products, in-between tasks, or whenever they become contaminated.  Corrected On-Site.  New Violation. 14A, Violation of Code: [.04(4)(k) ] Observed multiple scoops for dispensing food stored directly in food with handle in contact with food (i.e. multiple containers of shredded cheese, chives, etc.). If storing in-use utensils in food, store them with their handles above the top of the food and the container.  New Violation. 14B, Violation of Code: [.05(10)(a) ] Observed multiple bowls and other food containers stacked wet on shelves to dry. Do not stack dishes while wet. Equipment and utensils must be allowed to air-dry before stacking.  Repeat Violation. 14D, Violation of Code: [.04(4)(n) ] Observed employee with gloves on apply mitts to drop raw burgers on the grill. According to person in charge mitts are applied over gloves to handle raw meat. Mitts are then removed and employee continues to prepare food without changing gloves. Double-gloving to handle raw meat may not be substituted for washing hands and changing gloves. Have employees wear only one pair of gloves, and have employees wash hands and change gloves after handling raw animal products. Double-gloving is not allowed; only one pair of gloves/mitts may be worn at a time.  Repeat Violation. 17D, Violation of Code: [.07(4)(b) ] Observed employee cell phone on prep table. Observed another employee cell phone resting directly on uncovered to-go containers. Cell phones were removed. Employee items must be located in a designated area where contamination of food, equipment, utensils, linens and single-service and single-use articles can not occur.  Corrected On-Site.  New Violation.
