Flies Found in Prep Area: Restaurant Inspections September 18

Violations: 1-2, Violation of Code: [.03(2)(a)-(n) ] The person in charge is not performing duties such as ensuring proper handwashing, proper eating and drinking practices, etc. The person in charge must perform duties at all times. The person in charge was informed.  Corrected On-Site.  New Violation. 2-1B, Violation of Code: [.03(5)(c) ] 1. An employee was observed entering the facility from front door then scooped rice into a disposable tray for customer without washing hands. 2. An employee was observed entering the facility through the back door then handled a knife and frying pans without washing hands. 3. An employee was observed cutting raw chicken with bare hands then opened the walk-in cooler door with said hands. Food employees must wash hands at a frequency to prevent contamination of food and/or equipment. The employee decided to clean the utensils and equipment.  Corrected On-Site.  New Violation. 2-2B, Violation of Code: [.03(5)(j)1&2 ] 1. An employee was observed eating a lime in the preparation area. 2. An employee or customer water bottle was observed stored on the preparation table. Employees must drink from an approved, covered container in the food prep or food storage area. The employee decided to ceas eating and discarded the water bottle.  Corrected On-Site.  New Violation. 2-2D, Violation of Code: [.06(2)(o) ] The only hand sink in the preparation area was blocked with brown serving trays. Hand sink must be used for intended purpose. The brown trays were removed and cleaned.  Corrected On-Site.  New Violation. 2-2D, Violation of Code: [.03(5)(d) ] An employee was observed using the mop sink for hand washing. The hand sink must be used for hand washing. The employee decided to use the hand sink.  Corrected On-Site.  New Violation. 3-1C, Violation of Code: [.04(1) ] An employee was observed retrieving raw chicken from the floor then returned the chicken to the storage container in the walk-in cooler. Foods must be safe, unadulterated, and honestly presented. The employee decided to discard the foods.  Corrected On-Site.  New Violation. 5-2, Violation of Code: [.04(7)(e) ] Tripleta (fried egg, salami, and cheese) is offered without a written consumer advisory provided. An advisory must be provided for the consumption of raw or undercooked animal products at the point of sale. The employee decided to provide the advisory.  Corrected On-Site.  New Violation. 6-2, Violation of Code: [.04(6)(g) ] All the cooked foods prepared Monday (precooked corn, cooked cow feet, cooked meatballs, etc.) in the walk-in cooler without date marking. Refrigerated, ready-to-eat, potentially hazardous food prepared and held in the establishment for more than 24 hours must be clearly marked to indicate the date by which the food must be consumed, sold, or discarded. The employee decided to date mark the foods.  Corrected On-Site.  New Violation. 8-2B, Violation of Code: [.07(6)(d) ] Residential Raid stored underneath the steam table. Only commercial chemicals for the restaurant may be used. The employee decided to remove the Raid from facility.  Corrected On-Site.  New Violation. 8-2B, Violation of Code: [.07(6)(c) ] Cans of bacteride and first aid kit stored with disposable plates in the storage cabinet. Chemicals must not be stored so that they cannot contaminate food, equipment, utensils, linens, and/or single-service articles. The employee decided to move the disposable plates.  Corrected On-Site.  New Violation. 8-2B, Violation of Code: [.07(6)(g) ] The chlorine bottle used for cleaning the dining tables is above 200 parts per million (ppm). The food contact surface sanitizer must meet the minimum 25 ppm and not exceed the maximum 100 ppm. The employee decided to adjust the bottle.  Corrected On-Site.  New Violation. 18, Violation of Code: [.07(5)(k) ] Flies and fruit flies were observed in the preparation area.
