Provide digital thermometer to monitor compliance with minimum cooking temps for PHFs.  New Violation. 15A, Violation of Code: [.05(6)(a) ] WIC door with non operational self-closure device.Repair closing device at WIC door to prevent fluctuating air temps.  New Violation. 15C, Violation of Code: [.05(7)(d) ] Area behind cutting board with heavy accummulation of food particles.Increase cleaning schedule of described area and other food contact surfaces to prevent accummulation of food particles and grease.  New Violation.
