IHOP, Joe's Crab Shack Score B's: Restaurant Inspections November 19

Two Mexican restaurants in Lilburn were also checked out.

The following are restaurant health inspection scores as reported by Gwinnett County:

Violations: 4-2B, Violation of Code: [.05(6)(n) ] In-use mechanical dishmachine not dispensing sanitizer. PIC noted that sanitizer pump was turned off to machine - pump was turned on and sanitizer was noted to be dispensing at proper concentration. Mechanical dishmachine that uses chemical sanitizer should be dispensing at 50-100 ppm for adequate sanitization.  Corrected On-Site.  Repeat Violation. 6-1A, Violation of Code: [.04(6)(f) ] Potentially hazardous foods cold holding above 41 F in prep cooler at front service area. Items were discarded & cooler will not be used until repaired (technician on site to repair unit during inspection). PHF's that are to be cold held (no time control documentation) should be cold held at 41 F or below.  Corrected On-Site.  New Violation.

Violations: 6-1C, Violation of Code: [.04(6)(d) ] Three containers of salsa cooling since 11/18 above 41 F. Salsa was discarded & manager was advised on proper cooling methods. Cooked potentially hazardous foods should be cooled from 135 F to 70 F in two hours and from 70 F to 41 F in an additional four hours (six hours total to 41 F).  Corrected On-Site.  New Violation. 11A, Violation of Code: [.04(6)(e) ] Salsa cooling in deep containers with tight fitting lids in the walk-in cooler & rice cooling in deep pans with ice bath only contacting the bottom of the container. Salsa was discarded & rice was moved to shallow pans with full ice baths to continue cooling. Rapid cooling methods include ice paddles/baths, shallow pans, loose coverings while cooling & consistent stirring while cooling.  Corrected On-Site.  Repeat Violation.

Violations: 1-2, Violation of Code: [.03(3)(a)-(d) ] Original Certified Food Safety Manager certificate not posted (no certificate posted). Manager advised that the last CFSM certificate holder left the facility over 90 days ago. Post original certificate within 10 days.  New Violation. 6-1A, Violation of Code: [.04(6)(f) ] Multiple potentially hazardous foods cold holding above 41 F (no time control documentation). Foods were discarded - prep cooler will not be used until repaired. PHF's that are to be cold held should be cold held at 41 F or below.  Corrected On-Site.  New Violation. 15A, Violation of Code: [.05(6)(q) ] Upper unit of left prep cooler not capable of maintaining PHF's at 41 F or below (see temperature observations). Unit will not be used until repaired - technician had been called during inspection. Cooling units must be capable of maintaining foods at 41 F or below.  New Violation.
