Raw chicken drumettes were stored above cooked onion and carrots in the drink cooler next to steam table. 2. raw eggs above cooked chicken in the drink cooler next to steam table. 3. Unwashed limes above sugar in the dry storage area. Raw animal foods must be separated from each other and ready-to-eat foods during storage, preparation, holding, and display. The employee decided to rearrange the foods.  Corrected On-Site.  New Violation. 6-1A, Violation of Code: [.04(6)(f) ] Potentially hazardous foods (see temperature observation section) holding on top of the holding unit or prep cooler above 41°F. Cold-held potentially hazardous foods not maintained below 41°F. The employee decided to return the foods to the cooler and the other foods were discarded.  Corrected On-Site.  New Violation. 6-1C, Violation of Code: [.04(6)(d) ] 1. Cooked beef cooling since noon temped 84°F at 2:48 pm. 2. cooked chorizo cooling since 12:05 pm temped 86°F at 2:48 pm. Cooked potentially hazardous foods must be cooled from 135°F F to 70°F within 2 hours. The employee decided to discard the foods.
Sliced tomatoes cooling since 11:00 am temped 50°F pm at 2:50 pm. Potentially hazardous foods prepared at ambient temperature must be cooled to 41°F within 4 hours. The employee decided to discard the foods.  Corrected On-Site.  New Violation.
