Restaurant Grades: Know Then Go

A look at restaurant inspections conducted by the health department in Greater Lilburn.

Below are this week's results of recent Gwinnett County restaurant inspections in Greater Lilburn by theΒ East Metro Health District, which covers Gwinnett, Rockdale and Newton counties. Each report includes a synopsis of some of the deficiencies found by the inspector.

Jan. 13

Violations cited: There was pink and black mold on the automatic ice maker for the soda machine. The slicer and some plastic food containers were still dirty after cleaning. Take-out cups were stacked too high. There was no toilet paper in the dispenser in the women's restroom.

Jan. 11

Score: 86/B

Violations cited: Sliced cheese in the prep cooler wasn't clean and had a long hair between the slices. Shredded lettuce had some mayonnaise on the top layer, and it was brown and wilted. There was a dirty tray and a pan with day-old food in the warm cabinet. Some shelving had chicken pieces scattered on it.

Violations cited: An employee's open beverage was on top of a box of unwrapped tea bags, and another drink was on the prep table. Raw bacon was stored above cooked pork and sliced cheese in the prep cooler, and buckets of raw chicken wings were stored above celery in an upright cooler. The inside of the microwave and the piercer on a can opener were dirty. Chicken tenderloins weren't cooked to a high enough temperature. Containers of onions and parcooked hamburgers weren't marked for time control. An open package of hot dogs was in the cooler for more than seven days (open containers of food must be discarded if not used within seven days).

Violations cited: Chicken wasn't cooked to the proper temperature. The handicapped stall in the women's restroom had a broken door stop, and some light bulbs in both restrooms needed replacing.

Violations cited: Some plastic food pans were dirty with food debris and grease. There was "excessive" mold in the automatic ice maker for the soda machine. Some prepared or opened foods that were stored didn't have date labels on them. An employee on the prep line was wearing a ring with a large stone (only plain bands are allowed). A tray holding disposable utensils was dirty.

Jan. 10

Score: 90/A

Previous scores: 96/A on Oct. 11, 2011 and 75/C on Oct. 1, 2011

Violations cited: Salsa roja, salsa verde, and tortilla chip salsa on the condiments buffet weren't kept cold enough, and cooked chicken being held on a grill wasn't hot enough.

Score: 86/B

Previous scores: 76/C on Nov. 2, 2011 and 60/U on Oct. 24, 2011

Violations cited: An employee had an uncovered drink on the ingredients table. There was no soap at the handwashing sink. Some foods -- refried beans, cooked beef in stock, beef tongue, boiled chicken, beef head, champorrado, tamales, salsa molcajete, and barbacoa -- had dates ranging from Dec. 24 to Jan. 3 and needed to be discarded. The most recent inspection report wasn't on display, and the food service permit wasn't posted. A bucket of rice had a hole at the top. The floor at a cooler and at a grill was dirty with grease and food debris.

Score: 96/A

Violations cited: The person in charge wasn't aware of employee health policy.
