Reviewed with PIC until she could answer questions. Person in charge must understand health policy and what needs to be reported and to whom.  Corrected On-Site.  New Violation. 2-2B, Violation of Code: [.03(5)(j)1&2 ] opened bottle of water on shelf with food. Bottle removed and discarded. Employee drinks must be in a disposable cup, with a lid and a straw and stored to prevent contamination.  New Violation. 4-1A, Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw hamburgers and eggs stored above ready to eat foods. Foods moved and rearranged for proper storage. Food must be stored in such a way as to prevent contamination.  Corrected On-Site.  New Violation. 6-1A, Violation of Code: [.04(6)(f) ] Cheeses and torta maize above 41F. Foods discarded. Patties reheated since they had only been out for 1 hour. Foods were date marked. Utensils removed and washed. Violations: 2-1B, Violation of Code: [.03(5)(c) ] An employee was observed handling cash at the register, filled a clean container with strawberry puree, and then rubbed hand against the knife to rinse in the 3-compartment sink before slicing a banana with bare hand. Food employees must wash hands at a frequency to prevent contamination of food and/or equipment. Food contact surfaces must be cleaned at frequency to prevent visible mold. In-use, wet wiping cloths not stored in an approved sanitizing solution.
