Vietnamese Restaurant Cited for Cooling Violation Again: Restaurant Inspections September 3

Violations: 6-1C, Violation of Code: [.04(6)(d) ] Beef broth cooling since 10:00 AM, temped 43F at 4:25 PM Cooked potentially hazardous foods must be cooled from 135F to 41F within a total of 6 hours. The employee decided to discard the foods.  Corrected On-Site.  Repeat Violation. 6-1D, Violation of Code: [.04(6)(i) ] Bean sprouts holding at room temperature since 11:00 AM, accessed at 1:45 PM without a label indicating the time they were removed from the walk-in cooler. Time controls must be documented according to written procedure. The container was marked.  Corrected On-Site.  Repeat Violation. 11A, Violation of Code: [.04(6)(e) ] Beef broth cooling in 6 inch plastic containers with lids on the bottom shelf of the walk-in cooler did not reach 41F within 6 hours. Potentially hazardous foods must be properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.). The employee decided to discard the foods.  Repeat Violation. 15A, Violation of Code: [.05(1)(a) ] Rust is present on the shelving in the walk-in cooler and dry storage. Materials used in the construction of food equipment must be easily cleanable and maintained in good condition.  Repeat Violation.
