Cold-holding potentially hazardous foods should be maintained at 41oF or below.  Corrected On-Site.  Repeat Violation. 6-1C, Violation of Code: [.04(6)(d) ] Tomatoes cooling since 11:00 AM in make line reach-in at temperatures above 41oF (see temperatures). Tomatoes discarded. When cooling from ambient temperature, potentially hazardous foods should be cooled to 41oF within 4 hours.  Corrected On-Site.  Repeat Violation.
