Restaurant Grades: How Lilburn Scored in Health Inspections

April 9

Deficiencies observed: Grid slicer covered in debris from previous day; needs to be cleaned within four hours of last use. Tableware needs to be wrapped better to prevent contamination.

April 7

Restaurant: Fish N Go

Location: 4805 Lawrenceville Hwy.

Score: 89/B

Previous scores: 75/C (Feb. 7, 2011); 66/U (Feb. 10, 2011)

Deficiencies observed: Failure to employ a Certified Food Safety Manager (third repeat violation; results in temporary closure). Need to register for a Servsafe food safety course as soon as possible. Observed refrigerated, ready-to-eat, potentially hazardous food that was prepared and held in the establishment for more than 24 hours that was not clearly marked to indicate the date the food was prepared and the date that it must be consumed, sold or discarded. Need to invest in date dots or stickers to label foods with dates.  No test strips to test chemical sanitizer.

Restaurant: BAPS Shayona

Location: 460 Rockbridge Rd.

Score: 94/A

Deficiencies observed: Multiple working spray bottles were not properly labeled so that they are easily identifiable. Single-use stirrers are stored with other utensils unwrapped. Need to place stirrers in a dispenser to protect the stirrers from contamination. No test strips to test the sanitizer.

Restaurant: Judy’s Diner

Location: 5385 Lawrenceville Hwy.

Score: 86/B

Previous scores: 92/A (Sept. 9, 2010); 96/A (April 15, 2010)

Deficiencies observed: Failure to employ a Certified Food Safety Manager; need to register for class as soon as possible. Chemical sanitizer in spray bottle was at a toxic level (200 ppm); needs to be 50-100ppm. Chemical sanitizer in spray bottle was not labeled to be easily identifiable. Need a food thermometer designed for measuring thin foods such as bacon, chicken, sausage (repeat violation). Clean area between fryer baskets and grill cutting board (repeat violation).

April 5

Restaurant:

Location: 4800 Lawrenceville Hwy., Ste. 4

Score: 71/C

Previous scores:  92/A (Oct. 4, 2010); 97/A (Sept. 9, 2010).

Deficiencies observed: Failure to employ a Certified Food Safety Manager; need to register for class as soon as possible. Person in charge was not familiar with the employee health policy on symptoms, diseases, and reporting requirements. Dishes soaking in sink; no sanitizer available. No bleach was available to make sanitizer for dishes. All dishes must be washed, rinse, and sanitized properly. Bleach was purchased and dish sink was set up. Raw shrimp 45.5 degrees, steak kabab 46.5 degrees, raw fish 49.3 degrees and raw shell egg 43.6 degrees. All need to be 41 or below. Food thermometer not present (repeat violation). No handwashing sign was posted above the sink. Person in charge was given a handwashing sign. Bowl was in the bulk rice container; a scoop with a handle is required. Need to purchase strips to test chlorine sanitizer. Need the dumpster area to be better maintained.

April 4

Restaurant:

Location: 3915 Hwy. 29

Score: 87/B

Previous scores: 95/A (Sept. 16, 2010); 95/A (Jan. 20, 2010)

Deficiencies observed: Drink dispensing nozzles must be cleaned more frequently. Sliced tomatoes (44.5 degrees), sliced cheese (48.5) and chopped ham (45.3) need to be 41 or below (corrected on-site).

Location: 4133 Lawrenceville Hwy.

Score: 91/A

Previous scores: 96/A (Aug. 18, 2010); 95/A (Feb. 8, 2010)

Deficiencies observed: Cook was seen changing gloves to work with ready-to-eat food; hands must be washed between glove changing.

Score: 94/A

Previous scores: 96/A (Aug. 9, 2010); 91/A (March 8, 2010)

Deficiencies observed: Consumer advisory for raw or undercooked food is on menu, but asterisks needed to denote which items. Test strip needed for chlorine sanitizer solution. Mop was sitting in mop sink; it needed to be hanged to dry.

March 31

Restaurant:

Location: 900 Indian Trail Rd.

Score: 95/A

Previous scores: 96/A (Aug. 10, 2010); 93/A (March 22, 2010)

Deficiencies observed: Sanitizer bucket empty in automatic dishwasher. Stirrers at bar not wrapped. Need to purchase wrapped stirrers to prevent contamination.

Deficiencies observed: None

Restaurant: Las Arepas De Julia

Location: 4044 Hwy. 29, Ste. B

Score: 96/A

Previous scores: 84/B (Aug. 9. 2010); 85/B (March 16, 2010).

Deficiencies observed: Cooked rice was not properly cooled before being placed in cooler. Build-up of grease and oil on hood vents.

March 30

Restaurant:

Location:  4045 Five Forks-Trickum Rd.

Score: 83/B

Previous scores: 91/A (Aug. 12, 2010); 87/B (March 11, 2010).

Deficiencies observed: Beverage dispensing nozzles/unit not cleaned at necessary frequency; Sweet and sour chicken cooked previous night was not cooled to appropriate temp range (food discarded). Sauces containers were placed on tables with spoons; they should be removed and replaced by squeeze bottles or spoons should be replaced for every customer (sauces removed). Wet wiping cloths were stored on countertops. They need to be stored in an approved sanitizing solution when not in use. Tables were preset with tableware; they must be wrapped if table is preset.

Location: 4129 Shady Dr.

Score: 96/A

Previous scores: 100/A (Sept. 17, 2010); 97/A (March 24, 2010).

Deficiencies observed: Multiple boxes of food on the floor of the walk-in cooler and walk-in freezer; must be six inches off floor. Pans were stacked wet after they were washed; must be air-dried before being stacked.
