Deficiencies cited: Chemical sanitizer for wiping cloths was at 10 ppm (chlorine), needs to be 50-100 ppm.

Deficiencies cited: Chicken and hardboiled eggs not at 41 degrees or below; Apples on serving line must have shield in front.

April 13

Location: 4099 Lawrenceville Hwy.

Score: 93/A

Previous scores: 86/B (Sept. 10, 2010); 92/A (April 21, 2010)

Deficiencies cited: Person in charge not knowledgeable about employee health policy/reporting policies; fish and precooked shrimp held in containers on ice, food needs to be stored in a way to prevent contamination and to hold temp without ice; employee seen not wearing hair net or cap to keep hair restrained; Sanitizer solution for wiping cloths needs to be 100 ppm (chlorine), not at 200 ppm as was found.

Score: 82/B

Previous scores: 84/B (Aug. 17, 2010); 83/B (4/21/2010)

Deficiencies cited: Some foods not covered in reach-in and prep coolers; Some refrigerated foods not date-marked properly (repeat violation); Chemical spray bottles not labeled with the common name of chemical so it can be easily identifiable; Worker seen during inspection without proper hair restraint (hair net, cap); Wiping cloth sanitizer was 200 ppm chlorine, needs to be 50 to 100 ppm; Automatic dishwasher not sanitizing dishes properly.

Score: 84/B (Follow-up inspection)

Previous scores: 71/C (April 5, 2011); 92/A (Oct. 4, 2010)

Deficiencies cited: Person in charge needs to have food safety course certification (repeat violation) by May 19; Raw beef and fish stored uncovered in cooler; Some read-to-eat foods in display cooler not date-marked properly; Test strips to measure sanitizer concentration at dish sink not available (repeat violation).

Score: 84/B

Deficiencies cited: Cook prepared pico de gayo with bare hands, gloves needed (discarded pico de gayo); Santizer in wiping cloth container was at 10 ppm, needs to be 50-100 ppm; Cook was not wearing hair restraint.
