Health department inspections for May 31-June 3 in Lilburn and Mountain Park.

Results of recent Gwinnett County restaurant inspections in Greater Lilburn by the East Metro Health District, which covers Gwinnett, Rockdale and Newton counties. Each report includes a synopsis of deficiencies found by the inspector.

Deficiencies Found: Several containers in refrigerator with food cooked more than 24 hours previously were not date-marked for when food must be consumed, sold or discarded; Service sink did not have hose bib breaker (repeat violation); Front and back doors were propped open, they must be tightly closed to keep out pests and rodents.

Deficiencies Found: Cook seen chopping raw lettuce without wearing gloves; Ice bins must be cleaned at least every two months; Chicken, tongue and steak cooked more than 24 hours previously were not date-marked for when food must be consumed, sold or discarded.

Deficiencies Found: (Follow-up Inspection) Food employees were seen taking order, then beginning to prepare food without cleaning hands (employees must wash hands after changing task to food preparation); Cooked lo mein noodles in bowl were placed in a plastic shopping bag (must be covered with clear wrap); Wiping cloths seen on counter tops (they must be in sanitizing solution when not in use); Most recent inspection report was not posted in public view as is required.

Deficiencies Found: (Follow-up Inspection) Employee seen washing hands in ware-washing sink, not in hand-washing sink; Dishes were seen washed with soap, then rinsed and placed to dry (there needs to be a sanitizing step in the process); Several items in prep coolers were not being kept at 41 degrees or below (manager contacted technician to work on equipment); Cooked rice was not properly cooled (rice was discarded); Prep cooler thermometer read 60 degrees and freezer temp was 35 (technician called).

Deficiencies Found: Beverage dispensing nozzles and units had mold on them (need to be cleaned frequently to prevent accumulation); Items on the “cold hold” buffet table were above 41 degrees; Can opener was covered in old metal and debris from previous use (blade was washed, rinse and sanitized).
