Restaurant Grades: Know Then Go

Results of recent Gwinnett County restaurant inspections in Greater Lilburn by the East Metro Health District, which covers Gwinnett, Rockdale and Newton counties. Each report includes a synopsis of deficiencies found by the inspector.

Deficiencies Found: Small sanitizer was stored on counter where coffee is prepped (needs to be under counter);  Sanitizer fluid for stored wiping cloths was 200 ppm chlorine (needs to be 100 ppm); Mops need to be hanged to dry when not in use.

Deficiencies Found: Written procedure not in place for public-health control (Need to write out the items that are placed under time as a control and also mark the container); Cheese and tomatoes were being held for five hours under time control after food came out of cooler (must be four hours); Employee seen prepping sandwich, then begin sanitizing counter top without changing gloves (new gloves needed when changing tasks).

Deficiencies Found: Ice for drinks at the bar not protected from contamination; No warm water at one handwashing sink (repeat violation; water heater ordered); Dust buildup on pipes in kitchen; spider webs on ceiling in liquor room; dust on walls behind ice machines; Light fixtures in kitchen missing shields; “Excessive” fruit flies in two areas.

Deficiencies Found: Potentially hazardous foods not properly cooled (facility placing hot food directly into cooler next to cold food, making the temperature rise for those cold items. Facility must cool food on top shelf of cooler in the coldest section. Must use ice bath and ice paddles to cool food down prior to placing into packed walk-in cooler.); No thermometer in hot-foot storage area; Single-service items in dry storage must be covered; Temp in walk-in cooler was 50 degrees (must be 41 or below; technician contacted and arrived during the inspection); Grease buildup inside dishwasher.
