Results of recent Gwinnett County restaurant inspections in Greater Lilburn by the East Metro Health District, which covers Gwinnett, Rockdale and Newton counties. Each report includes a synopsis of deficiencies found by the inspector.

Deficiencies Found: Wet wiping cloths not stored in approved sanitizing solution; Cutting boards not maintained in good repair (must be replaced); Dish machine sanitizer level below required strength; Non food-contact surfaces not cleaned frequently enough; Multiple floor tiles missing next to rear-door exit.

Deficiencies Found: Person in charge was unable to name the max cold holding (41 degrees) and min hot holding (135) temps for potentially hazardous food; Hand sinks must be readily accessible and used only for hand washing; Raw meat foods not separated during storage and preparation (repeat violation); Hot potentially hazardous foods not cooled with approved method; Stored metal pans still moist after cleaning (should be air-dried before storage); No test strips available for sanitizer in three-compartment sinks.

Deficiencies Found: (Follow-up inspection) Raw chicken stored above ready-to-eat meat and seafood in glass-door cooler (must be stored below); Ice machine has build-up around ice shoot; Sanitizer buckets must have sufficient chlorine in solution and be kept off the floor; Ambient air temp in one cooler not at 41 degrees or below as required.

Deficiencies Found: Cold-held potentially hazardous food not held at 41 degrees or below (repeat violation); Fried noodles stored in cardboard box (must be in food-safe containers); Wet wiping cloths stored on counter (must be in sanitizer between uses); Prep cooler ambient temp was 57.7 degrees (must be at 41 or below); Front door open at the beginning of the inspection (must be tightly closed).

Previous Scores: 84/B (March 29, 2011); 76/C (March 19, 2011)

Deficiencies Found:  Sanitzer in dish-washing sink was 10 ppm bleach (needs to be 50 to 100 ppm); Sanitizer in spray bottle was 200 ppm.
