Grilled Zucchini Fattoush

 

Is your garden loaded with zucchini and cherry tomatoes like mine? Is your herb garden reaping its best harvest? Here is a great recipe using both. Fattoush is a bread salad made with pita. It is interesting that almost all of the countries around the Mediterranean Sea have their own special bread salad. The ones made with pita are in the Arabic Levant cuisine (Ottoman Empire area). I like using the pita bread for this salad because it holds up better than other types of bread. You can use any vegetable for this dish but the most common are cucumber, tomato and romaine lettuce. Using grilled zucchini and grilled pita gives the salad a nice smoky flavor and the arugula gives it a nice peppery addition.

Grilled Zucchini & Pita Bread

2 zucchini, ends removed and sliced in ½ “rounds

Olive oil

 Salt & Pepper to taste

2 Pita breads

 

Light a charcoal grill. When the coals are an ash color it is ready for grilling. Paint the zucchini on both sides with olive oil then salt & pepper to taste. Grill the zucchini over direct flame just until you see grill marks. Flip the zucchini over and repeat. It is about 3-4 minutes per side depending on how hot the coals are. Grill the pita bread just until you see grill marks. Flip the pita and repeat. Cut the pita with a sharp knife into bite size pieces.

 

Salad

1 ½ cups of cherry tomatoes, cut in half

1 ½ cups of arugula

 

Vinaigrette

1 Tablespoon of parsley, chopped

1 Tablespoon of oregano, chopped

2 Tablespoon of chives, sliced thinly

1 ½ Tablespoon of red wine vinegar

3 Tablespoon of good quality extra virgin olive oil

Salt & Pepper to taste

 

Whisk everything together until the olive oil is emulsified.

 

Garnish

1 Tablespoon of basil, chiffonade

 

To Assemble:

In a large bowl toss the pita, zucchini, cherry tomatoes, arugula with the vinaigrette. Let it sit for about 5 minutes so the pita has time to absorb some of the dressing. Top with the basil and serve.
